For 2 1/2 days come and experience how this integrated foods and nutrition curriculum works in the teaching kitchen in which it was created! Teachers and lay users of the curriculum will cook, harvest, preserve and discuss real food in the center of organic farming country. Jane Siemon, creator of The Whole Plate, Monique Hooker, guest chef, and other talented chefs and farmers will lead this intimate course.
This training is accredited with the University of Wisconsin, and participants can apply for continuing ed credits. Transfer of credits depends on the student’s home institution, inquire before applying.

Monday Evening
Registration, Introductions
View dairy cow milking
On-farm dinner
Tuesday
Class #1 with Jane: Overview of curriculum and sample lesson
Prepare lunch from recipes
Visit local farms and harvest produce for canning
Dinner preparation with Guest Chef
Presentation on Farm to School connections
Wednesday
Class #2 with Jane: Study Questions from Reading Assignment
Canning the produce from the farm visit
Lunch preparation
Field trip to local food processor
Reading Labels PowerPoint and Assignment: Trip to Coop and grocery store
Closing session
Optional film showing
